Baked Ziti

Recipe From: Nathan Belhumeur

Ingredients

Sauce

  • 32oz Tomato Sauce with Meat
  • 3 Tbsp Minced Garlic
  • Onion Powder
  • Pepper
  • Salt

Ziti

  • 1 Large Egg
  • 16oz (3Cups) Ricotta Cheese
  • 2Cups Mozzarella Cheese
  • 16oz Cooked Ziti Pasta
  • 1 Cup Mexican Blend Cheese

Directions

  1. Preheat oven to 375°F
  2. In a large pot mix all of the pasta sauce ingredients and bring to a simmer.
  3. Cook ziti according to directions, drain.
  4. Using the ziti pot mix all the ziti ingredients together except for the Mexican blend cheese.
  5. Add 1 1/2 cup of the sauce to the mixture and stir.
  6. In casserole dish put one layer of ziti mix, then top with sauce, then top with mozzarella.
  7. Add second layer of ziti mix then top with sauce. Then cover with Mexican blend cheese.
  8. Bake for 30 minutes then let stand for 15 minutes.

Rice and Chili

Ingredients

  • 1 lbs Ground Beef
  • 1 Cup Diced Onion
  • 1 Cup Diced Green Pepper
  • 2 Can 16 oz Undrained Red Kidney Beans
  • 1 Can 15.5 oz Diced Tomatoes Undrained
  • 1 Can 11 oz Whole Kernel Corn Drained
  • 1 Can 6 oz Tomato Paste
  • 1 Can 6 oz Water Using Tomato Paste Can
  • 2 Tbs Chile Powder
  • 3 Beef Bouillon Cubes
  • 1 Tsp Coriander
  • 1 Tsp Cumin
  • 1/2 Tsp Chipotle Chile Pepper Powder
  • 3 Tsp Garlic (Powder?/Minced?)

Directions

  1. Cook rice according to directions.
  2. In large pan cook beef, onion, green pepper, garlic until meat is browned.
  3. Add all the rest of the ingredients listed and blend.
  4. Bring pot to a boil, stirring occasionally so contents will not stick to bottom.
  5. Reduce heat to a simmer, cover, and let sit for 40 minutes.

Chicken Chow Mein

Ingredients

  • 12 oz Noodles
  • 8 oz Skinless Boneless Chicken Breasts
  • 3 Tbs Soy Sauce
  • 1 Tbs Rice Wine or Dry Sherry
  • 1 Tbs Dark Sesame Oil
  • 4 Tbs Peanut Oil
  • 2 Garlic Cloves, Finely Chopped
  • 2 oz Snow Peas Trimmed
  • 4 oz Bean Sprouts
  • 2 oz Ham Finely Chopped
  • 4 Scallions Finely Chopped
  • Salt and Ground Pepper

Directions

  1. Cook noodles according to directions.
  2. Slice Chicken into fine slices.  Place chicken in bowl and add rice wine, sesame oil, & 2 tablespoons of the soy sauce.
  3. Heat peanut oil in wok on high heat.  When hot add chicken mixture.  Stir fry for 2 minutes then transfer chicken to plate and keep hot.
  4. Wipe wok clean and heat remaining oil
  5. Stir in garlic, snow peas, bean sprouts and ham.  Stir fry for 2-3 minutes over high heat.  Drain noodles, pad dry, and add to wok.
  6. Heat through and add remaining soy sauce and season with salt/pepper
  7. Add chicken, scallions, and serve
